For each shift in a restaurant, a head waiter/supervisor is needed to manage the operation during lunch or dinner service. It should be a person who has an overview and who works in the restaurant during the service.
This is because it should be clear to both the other staff and especially the guests who is responsible for any issues or problems that need to be addressed, especially if the service to the guest suffers. Having a supervisor creates security for those who work as waiters, as they usually have more experience of the waiters’ profession and what routines and structures exist.
A head waiter/supervisor who holds responsibility should be paid accordingly as agreed.
