A restaurant’s menu is its concept. It shows what they have to offer in terms of food and drink and the standard of the restaurant. However, a simpler menu does not necessarily mean that the chef has less gastronomic perception.
It is important to stay true to the concept in front of the guest, you can do less extravagance if the guest asks. But keep in mind that the more excesses from the menu, the more the concept has lost its charm.
